Olafur Arnalds, really nice music. Nick Cave and Warren Ellis have made a bunch of neat soundtracks too. And for something different you should check out Nujabes and Uyama Hiroto.

idk i go by soundtracks to stuff for good instrumentals like final fantasy soundtracks have a lot of pretty instrumentals. i personally think the ‘fragile dreams’ soundtrack has the prettiest songs. and ‘toki wo kakeru shoujo’ too.
